Pear and Almond Meringues
For five people (quantities for ten are given below)
5 ripe pears, cored and halved
3 medium-sized egg whites
100g ground almonds
100g caster sugar
Method
1. Heat the oven to 180C/350F/gas 4.
2. Place the pears in an ovenproof dish.
3. Wash a mixing bowl, and your whisk beaters, in hot water and washing up liquid, rinse and dry them. Next, whisk the egg whites in the bowl until they form soft peaks.
4. Sprinkle over the sugar and ground almonds, then continue whisking for a bit longer until the egg white mixture (a meringue) forms stiff peaks.
5. Spoon the mixture over the pear halves and bake for 15-20 minutes - or until the topping turns light golden. (Be careful not to let it burn.) Serve the dessert warm.

Serving Suggestions:
a) This light fruity dessert is delicious served with a little natural low-fat yoghurt mixed and a few fresh mint leaves sprinkled over will increase the pleasure.
b) Try this recipe using other soft fruits like nectarines or peaches. This is a fun, and tasty, way to increase your daily fruit intake.
