Likoma Easy Dough (Popular in Malawi)
For five people (quantities for ten are given below)
2 tsp sugar
1 tsp dried yeast
about 600ml lukewarm water
1 tsp salt
750g strong white bread flour, plus extra for rolling
Method
1. You will need a 900g (2 lb) loaf tin for five portions.
2. Put the sugar, yeast and half the water into a jug or cup and leave in a warm place for 15 minutes until foam forms on top.
3. Mix the flour and salt together in a large bowl. Pour the yeast mixture into the flour and stir in.
4. Add enough of the remaining water to form a soft dough.
5. Cover the bowl with a clean tea towel and leave the dough to rise for 15 minutes in a place of even warmth – not direct heat. This could be on a sunny window sill in summer, in an airing cupboard or even under a cold grill above a heated oven.
6. Remove the dough from the bowl and place on a floured board. Knead well for 5 minutes, adding more flour if necessary to prevent sticking.
7. Divide the dough, if necessary into loaves (if making more than 5 portions) and put the dough into a loaf tin (or tins).
8. Cover the loaf tin with a clean tea towel and put in a warm place until the dough has risen to double its original size.
9. Meanwhile, heat the oven to 200C/400F/gas 6 (if you are not already heating the oven to help raise the dough in the grill space above the oven).
10. Bake the loaf for 35-40 minutes. The top of the bread will be firm. Turn out and cool on a wire rack.
