Groundnut Stew (Beef and Peanut Stew)

For five people (quantities for ten are given below)

1 tbsp peanut or other vegetable oil
1kg stewing beef, cubed
2 tsp salt
1 large onion, chopped
2 large tomatoes, peeled and chopped
½ green chilli, finely chopped
½ tsp chilli powder
500ml water
100g peanut butter
5 hard-boiled eggs, to serve

Method

1. Heat the oil in a heavy pan and brown the beef cubes on all sides.
2. Add half of the salt and half of the onions, tomatoes, chilli and chilli powder with all of the water. Cover and simmer for 30 minutes.
3. Mix the peanut butter with some of the juice from the stew, and stir to a smooth paste. Add this to the stew.
4. Add the rest of the salt, onions, tomatoes, chilli and chilli powder. Cover and simmer for another 30 minutes or until the meat is tender.
5. Serve with a whole hard-boiled egg in each portion of stew.

Serving Suggestion:

a) Serve with rice, potatoes or Cornmeal Dumplings (see Side Dishes) or another kind of dumpling. Groundnut Stew is also delicious with injera, pitta or other flat bread.
