Dovi (Zimbabwean Peanut Butter Stew)
For five people (quantities for ten are given below)
3 tbsp vegetable oil
2 medium-sized onions, finely chopped
2 garlic cloves, peeled and finely chopped or crushed
2 medium-sized green peppers, chopped
2 x 400g tins of chopped tomatoes
salt and pepper
about 450g spinach or pumpkin leaves (boiled until tender and water squeezed out)
1 x 250g jar of good quality peanut butter (about 1 small jar)
375 g cornmeal, to serve
or 650g cassava, boiled
or 650g sweet potatoes, boiled
Method
1. Heat the oil in a large saucepan over medium-low heat, and cook the onions and cook the onions and garlic until tender.
2. Stir in green peppers and chopped tomatoes and season with salt and pepper. Let them cook about 5 minutes, stirring occasionally.
3. Meanwhile, thin the peanut butter by stirring in a little hot water to form a paste, then stir it into to the pot.
4. Simmer for 5 -10 minutes, then add the spinach or pumpkin leaves. Reduce the heat and let it simmer for another 20 minutes.
5. Meanwhile prepare the cornmeal, cassava or sweet potatoes.
6. Serve with the cornmeal [perhaps cooked as ‘African Cornmeal’ (see side dishes)] or with boiled cassava or boiled sweet potatoes.
