Accra (Trinidadian Salt Fish Cakes)

For five people (quantities for 10 are given below)

225g salt cod
2 tsp dried yeast
1 tsp sugar
2 tbsp warm water
125g plain flour
1 medium-sized onion, finely chopped
1 garlic clove, finely chopped
1 tbsp seeded and finely chopped hot chilli
1 tbsp finely chopped chives (optional)
salt and black pepper
vegetable oil for deep frying

Method

1. Put the fish into a large bowl, cover with cold water and soak for one hour.
2. Drain the fish, then cover it with boiling water and set it aside to cool.
3. Sprinkle the yeast and the sugar into the tablespoons of warm water and
let the mixture stand for ten minutes.
4. Drain the fish and rinse it in cold water, discard any skin and bones, and
Finely shred the remaining flesh.
5. Mix the flour, onion, garlic, peppers, chives, salt (if needed) and pepper
with the fish in a large bowl. Add the yeast mixture and beat until smooth.
Cover and allow to rise for around two hours in a warm place.
6. Heat oil in a pan or deep fat fryer. Drop tablespoons of the mixture into
hot oil and fry until golden brown.
7. Drain on kitchen paper and serve hot.
